Here's how to make a protein-rich omelette in 5 simple steps.

Whisk the Eggs, in a bowl, whisk together the eggs with a pinch of salt and pepper until well-mixed and slightly frothy.
Prep the Veggies, heat olive oil in a non-stick pan over medium heat. add chopped spinach and diced tomatoes. Sauté for 2-3 minutes until soft.
Add Protein, if using chicken or tofu, add it to the pan and sauté for another minute to warm it up.
Cook the Omelette, pour the whisked eggs over the veggie and protein mixture in the pan. Let it cook for 2-3 minutes or until the edges start to set.
Flip and Serve, gently fold the omelette in half and cook for another minute. Optionally, sprinkle cheese inside. serve hot.
