Prepare the leaves, wash and dry 15-20 spinach leaves thoroughly.

Make the batter, mix gram flour, turmeric, chili powder, salt, and water into a smooth batter.

Coat the leaves, dip each spinach leaf in the batter, ensuring an even coat.

Fry the leaves, deep fry the coated leaves until golden and crispy. Drain excess oil.

Assemble the base, arrange fried leaves on a plate and spread yogurt over them.

Add chutneys and spices, drizzle tamarind and green chutneys, then sprinkle spices like chaat masala and cumin powder.

Garnish and serve, top with sev, onions, tomatoes, and coriander. serve immediately.
