Prepare the dough, in a bowl, mix flour, semolina, salt, and ghee. rub well until the mixture turns crumbly. add water gradually and knead into a firm dough. cover and let it rest for 30 minutes.

Make the peas filling, heat oil in a pan, add aromatics, green chilies and ginger paste. add mashed peas, turmeric and spices. cook for 5 minutes, then let it cool.

Shape the kachoris, take small portions of dough, roll into balls, and flatten slightly. place a spoonful of filling in the center, seal the edges, and gently roll into a round shape.

Fry the kachoris, heat oil on medium-low heat and deep-fry kachoris until golden brown and crispy. flip occasionally for even frying.

Drain and serve, remove kachoris from oil and drain on paper towels.

Enjoy, serve hot with tamarind chutney, mint chutney, or aloo sabzi.
