Here’s a simple 6-step recipe for making Millet Kheer.

Rinse and Soak the Millet: Rinse the millet thoroughly and soak it in water for 15-20 minutes, then drain.
Cook the Millet: In a heavy-bottomed pot, add 1 tbsp ghee (optional) and lightly toast the millet. Add 1 cup of water and cook until the millet softens and absorbs the water.
Add Milk: Pour in the milk and bring it to a gentle boil. Stir occasionally to prevent sticking.
Simmer and Thicken: Lower the heat and let the mixture simmer for 10-15 minutes, stirring frequently until it thickens.
Sweeten and Flavor: Add sugar, cardamom powder, and soaked saffron (if using). Stir well and let the kheer cook for another 5 minutes.
Garnish and Serve: Add chopped nuts, give it a final stir, and serve warm or chilled. Enjoy your nutritious Millet Kheer.
