Prepare the koftas, mix spinach, gram flour, onion, chilies, and spices into a thick mixture. shape into balls and deep-fry until golden brown.

Saute the aromatics, heat oil, splutter cumin seeds, and saute onions until golden. add ginger-garlic paste and cook briefly.

Cook the tomato base, add tomato puree, turmeric, chili, and coriander powder. cook until the oil separates and the mixture thickens.

Add cream and spices, stir in cream or yogurt, garam masala, and salt. add water to adjust consistency and simmer for 5–7 minutes.

Combine koftas and gravy, add fried koftas to the gravy, simmer for 2–3 minutes, and garnish with coriander leaves. serve hot.
