Here's how to make authentic South Indian Lemon rice at home.

Heat oil & temper spices, heat oil in a pan and add mustard seeds. once they splutter, add chana dal, urad dal, peanuts/cashews, and saute until golden.

Add aromatics, add green chilies and curry leaves. saute for a few seconds until fragrant.

Mix in spices, stir in turmeric powder and salt, mixing well.

Combine with rice, add the cooked rice and gently mix until the spices coat the grains evenly.

Add lemon juice, turn off the heat and squeeze fresh lemon juice over the rice. mix well.

Garnish & serve, garnish with fresh coriander and serve hot with papad or coconut chutney.
