Rinse and soak, rinse the idli rice, urad dal, and fenugreek seeds separately. soak them individually in water for 4-5 hours. soak the poha in water for about 30 minutes before grinding.
Grinding, drain the soaked urad dal and fenugreek seeds. grind them together into a smooth batter, adding water as needed. grind the soaked idli rice and poha together into a slightly coarse batter. combine both batters in a large bowl.
Add coconut and ferment, mix in the grated coconut and yogurt into the batter. add salt to taste and mix well. cover the bowl and let the batter ferment overnight or for 8-10 hours in a warm place.
Prepare the steamer, after fermentation, stir the batter gently. grease idli molds with oil and pour the batter into each mold.
Steam the idlis, place the idli molds in a steamer or pressure cooker without the whistle. steam the idlis for 12-15 minutes on medium heat, or until a toothpick inserted comes out clean.
Cool and demold, pnce cooked, remove the idlis from the steamer and let them cool for a few minutes. gently remove the idlis from the molds using a spoon.
Serve, garnish and serve the poha coconut idlis hot with coconut chutney and sambar for a delicious breakfast.
