Prepare the Dough, mix wheat flour, salt, and water to make a soft dough. let it rest for 15 minutes.
Make the Filling, combine grated cheese, chopped chilies, coriander, and chili flakes or oregano.
Roll the Paratha, divide the dough into small balls and roll them into discs.
Stuff the Paratha, place the cheese mixture on one disc, cover with another, and seal the edges.
Cook the Paratha, cook the stuffed paratha on a tawa with ghee or butter until golden brown on both sides.
