Here's how to make authentic flavorful Mysore Masala Dosa at home in just 9 easy steps.
Prepare the batter, soak 2 cups rice, ½ cup urad dal, and 1 tbsp fenugreek seeds for 6 hours. grind into a smooth batter, ferment overnight.
Boil the potatoes, boil 3 medium potatoes until soft, peel, and mash them. set aside.
Make the mysore chutney, blend ½ cup roasted chana dal, 2 dried red chilies, 2 garlic cloves, 1 tbsp tamarind, and salt with little water into a smooth paste.
Prepare the potato masala, heat oil, add mustard seeds, curry leaves, and green chilies. saute onions, then add mashed potatoes, turmeric, salt, and a little water. cook well.
Heat the pan & spread the batter, heat a dosa tawa, grease lightly, and pour a ladle of batter. spread thinly in a circular motion.
Apply the mysore chutney, spread a thin layer of prepared chutney over the dosa while it cooks.
Add the potato masala, place a portion of potato masala in the center of the dosa.
Fold & cook, fold the dosa over the filling and let it crisp up for a few seconds.
Serve hot, serve with coconut chutney and sambar. enjoy your homemade mysore masala dosa.
