Shape the Vadas, take small portions of the mixture and flatten them into round vada shapes with your hands.
Heat Oil, in a deep frying pan over medium heat. test with a small piece of batter; it should sizzle and rise to the surface.
Fry the Vadas, in batches, turning occasionally, until golden brown and crispy on all sides. remove and place on a paper towel to drain excess oil.
Serve, the palak vadas with chutney or ketchup as a delicious snack or tea.
