Here's how to make high protein Oat Curd Rice at home in just 7 easy steps.
Cook the oats, in a pan, boil 2 cups of water and add oats. cook on low heat for 3-4 minutes until soft.
Let the oats cool, once cooked, let the oats cool slightly before adding curd.
Prepare the curd mixture, in a bowl, whisk together curd, milk, and salt until smooth.
Add protein-rich ingredients, mix in boiled moong dal and roasted peanuts/cashews for extra protein.
Prepare the tempering, heat ghee in a small pan and add mustard seeds, cumin seeds, green chilies, curry leaves, and grated ginger. saute for 30 seconds until fragrant.
Mix everything together, pour the tempering over the oat-curd mixture and mix well.
Garnish & serve, garnish with chopped coriander and serve chilled or at room temperature.
