Preheat your oven to 225°F.

Wash and slice the zucchinis into 1/8-inch thick rounds, using a mandoline slicer for even thickness.

In a large bowl, toss the zucchini slices with olive oil, salt, garlic powder, onion powder, black pepper, and optional Parmesan cheese until evenly coated.

Line a baking sheet with parchment paper and arrange the zucchini slices in a single layer without overlapping.

Bake in the preheated oven for 1.5 to 2 hours, flipping halfway, until crispy and golden brown, watching closely to prevent burning.

Remove from the oven, let the chips cool for a few minutes to crisp up, and enjoy your baked zucchini chips as a healthy snack.
