Prepare the Potatoes, peel and cut 3-4 medium potatoes into wedges or thick sticks. boil them in salted water until slightly tender, then drain and set aside.

Coat and Fry, in a mixing bowl, coat the potatoes with 2 tablespoons of cornflour. shallow-fry or deep-fry the potatoes in hot oil until golden and crispy. remove and drain on a paper towel.

Saute Garlic and Chilies, heat 1 tablespoon of oil in a pan. add 1 tablespoon minced garlic, 2 chopped green chilies, and sauté until the garlic turns golden.

Add Sauces, mix 1 tablespoon soy sauce, 1 tablespoon chili sauce, and 1 tablespoon tomato ketchup. pour this into the pan and cook for 1-2 minutes, allowing the flavors to blend.

Toss Potatoes, add the fried potatoes to the pan, toss well to coat them evenly with the sauce. cook for an additional minute to blend flavors.

Garnish and Serve, with chopped spring onions or sesame seeds if desired. serve hot for a spicy, crispy treat.
