Prepare the Chia Egg, mix 2 tbsp chia seeds with 6 tbsp water and let it sit for 5-10 minutes until it forms a gel-like texture.

Blend the Oats, grind 1 cup rolled oats into fine flour using a blender or food processor.

Mix Wet Ingredients, in a bowl, mash 1 ripe banana and mix it with almond milk, vanilla extract, maple syrup, and the chia egg.

Combine Dry Ingredients, add the blended oat flour, baking powder, cinnamon, and mix well to form a smooth batter. let it rest for 5 minutes.

Adjust Consistency, if the batter is too thick, add a little more almond milk to loosen it.

Cook the Pancakes, heat a non-stick pan, grease it with coconut oil, and pour small amounts of batter. cook on medium heat for 2-3 minutes per side until golden brown.

Serve & Enjoy, stack the pancakes, drizzle with honey or maple syrup, and top with fruits or nuts. Enjoy your healthy, egg-free, flourless chia seed pancakes.
