Prepare ingredients, roast peanuts if raw, and gather red chilies, tamarind, garlic, cumin, and salt.
Blend the chutney, blend peanuts, spices, and water into a smooth paste. adjust water for consistency.
Adjust seasoning, taste and adjust salt or tamarind as needed. blend again for uniform flavor.
Prepare tempering, heat oil, add mustard seeds, curry leaves, and asafoetida. pour over the chutney.
Serve, transfer to a bowl and serve with dosa, idli, or paratha.
