Prepare the sprouts, boil or steam the sprouts for 5 minutes until soft but not mushy. drain and keep aside.
Heat oil & saute spices, in a pan, heat oil and add mustard seeds, cumin seeds, and curry leaves. let them splutter.
Cook onions & green chilies, add chopped onions and green chilies. saute until the onions turn soft and golden.
Add tomatoes & spices, mix in the chopped tomatoes, turmeric, red chili powder, garam masala, and salt. cook until the tomatoes turn mushy.
Add coconut & finish cooking, sprinkle grated coconut, mix well, and cook for another 2 minutes.
Add sprouts & simmer, stir in the boiled sprouts, mix well, and let it simmer for 5 minutes on low heat.
Serve & enjoy, serve hot with rice, roti, or enjoy as a wholesome snack
