Slice & fry brinjal, cut brinjal into rounds, sprinkle salt, and shallow-fry until golden brown. Set aside.
Prepare yogurt mix, whisk yogurt with salt, roasted cumin powder, and a little water for a smooth consistency.
Heat oil & temper, in a pan, heat oil, add mustard seeds, cumin seeds, fennel seeds, and green chilies. Let them splutter.
Add spices, mix in turmeric, red chili powder, and garam masala. saute for a few seconds.
Combine brinjal & spices, lower the flame, add fried brinjal, and gently mix with the tempered spices.
Pour in yogurt, add the whisked yogurt, stir gently, and cook for 1-2 minutes on low heat, do not boil.
Garnish & serve, sprinkle fresh coriander and serve warm or chilled with roti, pulao, or parathas.
