Prepare the Dough, knead a smooth dough using 2 cups wheat flour, water, and a pinch of salt. cover and let it rest for 15 minutes.
Make the Filling, in a bowl, mix 1 cup sattu, finely chopped onions, green chilies, coriander leaves, 1 tsp ajwain, salt, lemon juice, and 1-2 tbsp mustard oil for flavor.
Stuff the Paratha, take a portion of dough, roll it into a small circle, and place a spoonful of sattu filling in the center. seal the edges and roll gently into a round paratha.
Cook the Paratha, heat a tawa or pan and cook the paratha on both sides, applying ghee or oil until golden brown and crisp.
Serve Hot, serve the delicious sattu paratha with curd, pickle, or chutney for a hearty meal.
