Boil the potatoes, boil potatoes until soft, peel, and dice them into cubes.
Heat the oil, in a pan, heat oil or ghee and add cumin seeds. let them crackle.
Add green chili, toss in the chopped green chili and saute for a few seconds.
Cook the spices, add turmeric, red chili, and coriander powder. stir well for a few seconds.
Mix in the potatoes, add diced boiled potatoes and salt. stir and cook for 5 minutes.
Garnish with coriander, sprinkle fresh coriander leaves for added freshness.
Serve hot, aloo jeera is ready, enjoy it with chapati, paratha, or dal-rice.
