Prepare the Dough, mix bajra flour, grated beetroot, chopped onion, green chili, coriander leaves, cumin seeds, and salt in a bowl. add water gradually and knead into a soft dough.
Rest the Dough, cover the dough with a damp cloth and let it rest for 10–15 minutes.
Divide the dough into small equal-sized balls for making parathas.
Roll the Parathas, dust your rolling surface with a little bajra flour. flatten each dough ball and roll it gently into a round paratha, about 5–6 inches in diameter.
Heat a tawa or skillet over medium heat. place a rolled paratha on the hot tawa and cook for about 1–2 minutes until light brown spots appear.
Flip the paratha and drizzle a little ghee or oil around the edges. cook until golden brown on both sides, pressing lightly with a spatula for even cooking.
Serve the beetroot bajra parathas hot with yogurt, pickle, or any side dish. enjoy this healthy meal.
