Prepare the kofta mixture, mix grated beetroot, mashed potatoes, gram flour, red chili powder, garam masala, and salt.

Shape the koftas, take small portion of the mixture and shape them into small balls.

Fry the koftas, deep-fry or shallow-fry the beetroot balls until crispy and golden. set aside on a paper towel.

Heat oil in a pan, splutter cumin seeds, then saute ginger-garlic paste and onions until golden. add tomato puree and cook until the oil separates.

Add spices, mix turmeric, coriander, and red chili powders into the curry base. cook for 1-2 minutes.

Finish the curry, add coconut milk or cream, water, and salt. simmer for 5-7 minutes until the curry thickens.

Assemble and serve, add the fried koftas to the curry just before serving. garnish with coriander leaves and serve hot with rice or roti.
