Prepare the tomatoes, chop tomatoes and extract tamarind pulp.
Temper the spices, heat oil, add mustard seeds, fenugreek seeds, and asafoetida, and let them splutter.
Cook the tomatoes, add tomatoes, turmeric, red chili powder, and salt. cook until soft.
Add sweetness and tang, stir in jaggery and tamarind pulp. cook until thickened.
Garnish and add toppings, add raisins and adjust seasoning. cool before storing.
