Prepare the Base, heat a bit of oil or ghee in a pan, add chopped onions, cashews, ginger, garlic, and green chilies, and sauté until golden. add chopped tomatoes, cook until soft, let cool, then blend into a smooth paste.
Cook the Gravy, in the same pan, heat a little more ghee, add the paste, and cook for 5-7 minutes. add turmeric, red chili powder, and garam masala, cooking until the oil separates.
Add Cream and Milk, pour in cream and a little milk, stirring to make the gravy creamy. let it simmer for 5 minutes.
Add Paneer, cubes, gently stirring to coat with the sauce. cook for 2-3 minutes.
Garnish and Serve, with kasuri methi and a drizzle of cream, then serve hot with naan or rice.
