How to make cabbage soup at home in 8 Steps.

Chop the Vegetables, finely chop 1 medium cabbage, 1 large onion, 2-3 carrots, 2 celery stalks, and 3-4 garlic cloves.

Saute the Aromatics, in a large pot, heat 2 tablespoons of olive oil. Add the chopped onions and garlic, saute until soft and fragrant.

Add the Vegetables, toss in the chopped cabbage, carrots, and celery. Stir them well and cook for a few minutes until they soften.

Add cabbage and Water, pour in 6 cups of vegetable and 2 cups of water. This will form the base of the soup.

Season the Soup, add 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of dried thyme, and a bay leaf. Adjust seasonings as per taste.

Bring to a Boil, cover the pot and bring the soup to a boil. Once it starts boiling, reduce the heat and let it simmer for 20-25 minutes.

Check for Doneness, ensure the vegetables, especially the cabbage, are soft and fully cooked. Taste and adjust seasoning if necessary.

Serve Hot, remove the bay leaf and serve the cabbage soup hot. you can garnish it with fresh herbs like parsley for extra flavor.
