Here's how to make Beetroot Barley Soup at home.

Saute Aromatics, heat olive oil in a pan, add chopped onion and garlic, and saute until fragrant.
Cook Barley, add soaked barley and stir for a minute, then pour in vegetable broth or water and let it simmer for 20 minutes.
Add Beetroot, mix in grated or chopped beetroot, season with salt and pepper, and cook for another 10-15 minutes until everything is tender.
Blend, for a creamy texture, blend the soup using a hand blender or keep it chunky as per your preference.
Garnish & Serve, sprinkle with fresh coriander or parsley and serve hot for a nutritious and hearty meal.
