Combine Ingredients, in a large bowl, combine the sliced cucumbers, diced bell pepper, chopped onion, and halved cherry tomatoes.
Chop Fresh Herbs, finely chop the fresh parsley or cilantro and add it to the vegetable mixture for added flavor and nutrition.
Make the Dressing, in a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
Dress the Salad, pour the dressing over the salad mixture and toss gently to ensure all the ingredients are coated evenly.
