Here’s a simple recipe to make a delicious caramel walnut cheesecake at home.

Make the Crust, crush 1½ cups of digestive biscuits or graham crackers. mix with ½ cup melted butter, press into a greased 9-inch springform pan, and chill for 10-15 minutes.

Prepare the Cheesecake Filling, beat 3 cups of cream cheese until smooth, then mix in 1 cup sugar, 1 tsp vanilla, and 3 eggs, adding one at a time until creamy.

Add Walnuts, fold in ½ cup chopped walnuts into the filling.

Pour and Bake, pour filling over the crust, bake at 325°F (160°C) for 50-60 minutes until the center is slightly jiggly but edges are set.

Cool the Cheesecake, let the cheesecake cool in the oven for an hour, then chill in the fridge for at least 4 hours.

Make Caramel Sauce, in a pan, melt ½ cup sugar until golden. add 2 tbsp butter and ¼ cup heavy cream, stirring until smooth. let cool slightly.

Decorate and Serve, pour the caramel sauce over the cheesecake, sprinkle with extra walnuts, and enjoy.
