Prepare the egg mixture, in a bowl, whisk eggs with soy sauce, sesame oil, sugar, and chili flakes. mix well for a flavorful base.

Heat the pan, melt butter in a pan over medium heat. this adds a rich, toasty flavor.

Toast the bread, dip the bread slices into the egg mixture, coating both sides well. place them in the pan and toast until golden brown.

Cook the remaining egg mixture, pour any leftover egg mixture onto the pan and scramble it lightly.

Assemble the toast, place the scrambled eggs on top of the toasted bread for an extra layer of goodness.

Garnish & add crunch, sprinkle chopped green onions, sesame seeds, and coriander for a fresh and crunchy finish.
