Soak & grind urad dal, soak urad dal and fenugreek seeds for 4-6 hours, then grind into a smooth paste.

Mix with bajra flour, combine the ground urad dal with bajra flour, add salt, and mix with enough water to form a thick batter.

Ferment overnight, let the batter ferment in a warm place for 8-10 hours or overnight.

Prepare the idli steamer, grease idli molds and bring water to a boil in a steamer.

Steam the idlis, pour batter into molds and steam for 10-15 minutes until a toothpick inserted comes out clean.

Serve & enjoy, let the idlis cool slightly, then serve hot with coconut chutney and sambar.
