Roast the Jowar Rava, dry roast jowar rava on medium heat until golden. set aside.

Prepare the Tempering, heat oil or ghee, splutter mustard seeds, and add cumin, chilies, ginger, and curry leaves. saute for a minute.

Cook the Vegetables, saute onions until soft, then add vegetables, turmeric, and salt. cook for 2-3 minutes.

Cook the Jowar Rava, add 2.5 cups of boiling water, stir in the roasted rava, and cook covered on low heat for 10 minutes.

Finish and Serve, add salt, lemon juice, and coriander. serve hot with chutney or pickle.
