Make sugar syrup, in a pan, dissolve sugar in water and boil until you get a sticky, one-string consistency. add cardamom or saffron for flavor and set it aside.
Heat oil for frying, heat ghee or oil in a flat pan on medium flame.
Pipe the batter, pour the batter into a piping bag or squeeze bottle with a small nozzle. pipe spiral shapes into the hot oil.
Fry the jalebis, fry the spirals until they turn crispy and golden on both sides.
Dip in sugar syrup, quickly dip the fried jalebis into the warm sugar syrup for a few seconds, ensuring they soak it well, then remove and serve hot.
