Here's how to make Palak Dosa at home.

Soak Rice, wash and soak 2 cups of dosa rice for 3-4 hours.

Prepare Spinach, clean and roughly chop 1 cup of spinach leaves.

Blend Ingredients, in a blender, combine the soaked rice, chopped spinach, 2 tablespoons of grated coconut, 1-2 green chilies, a small piece of ginger, ½ teaspoon of coriander seeds, ¼ teaspoon of cumin seeds, and salt to taste. add water as needed and blend until smooth.

Adjust Batter Consistency, transfer the batter to a bowl and dilute with water to achieve a thin, pourable consistency.

Cook Dosa, pour a ladleful of batter onto the center and quickly spread it in a circular motion to form a thin circle. cook until the edges lift, then flip and cook the other side briefly.

Serve, remove the dosa from the pan and serve hot with coconut chutney or sambar.
