Here's how to make rich and delicious Lauki ke Kofte at home in just 8 easy steps.
Prepare the lauki for koftas, peel and grate the lauki, then squeeze out excess water. save the water for the gravy.
Make the kofta mixture, mix grated lauki with besan, green chili, turmeric, red chili powder, cumin, and salt. shape into small balls.
Fry the koftas, heat oil and deep-fry the koftas on medium heat until golden brown. drain on paper towels.
Prepare the gravy base, heat oil in a pan, add cumin seeds, and sauté onions until golden. add ginger-garlic paste and cook until aromatic.
Cook the tomato puree, add pureed tomatoes, turmeric, red chili, coriander powder, and salt. cook until the oil separates.
Add water & simmer, pour the reserved lauki water, simmer the gravy for 5-7 minutes, and stir in yogurt or cream for richness.
Add the koftas, gently add the fried koftas to the gravy and let them soak for 2-3 minutes.
Garnish & serve, sprinkle garam masala and fresh coriander. serve hot with roti or rice.
