Prepare potatoes, peel and cube potatoes, soak in water for 10 minutes.

Heat oil, heat oil in a pan, add cumin seeds, and saute for 30 seconds.

Saute aromatics, add chopped onion, cook until golden, then add garlic and ginger; sauté for 1-2 minutes.

Add spices, stir in coriander, turmeric, chili powder, and salt; cook for 1 minute.

Cook potatoes, add potatoes, stir to coat, cook with 1/2 cup water for 15-20 minutes.

Simmer, let potatoes cook until tender, stirring occasionally and adding more water if needed.

Garnish and serve, add lemon juice, garnish with cilantro, and serve hot.
