Here's how to make Amritsari-Style Shardai at home.

Prepare the Paste, drain the soaked almonds, poppy seeds, fennel seeds, and melon seeds. grind them into a fine paste using a little water.

Extract the Flavor, strain the paste using a muslin cloth or fine sieve to extract a smooth, concentrated liquid. repeat with a little more water for maximum essence.

Blend the Ingredients, add this extract to a blender, along with sugar, cardamoms, saffron, chilled milk, and chilled water. blend until smooth.

Strain Again, for a silky texture, strain the mixture once more to remove any grainy residue.

Chill and Serve, pour the shardai into serving glasses, add ice cubes, and mix well.

Garnish and Enjoy, garnish with crushed nuts and saffron strands, then serve immediately for a refreshing and authentic Amritsari-style shardai.
