Prepare the Coconut Paste: Grind the grated coconut with a little water to form a smooth paste. Set aside.
Cook the Aromatics: Heat coconut oil in a large pan. Add mustard seeds and let them splutter. Add fenugreek seeds, followed by curry leaves and green chilies.
Saute Onions and Tomatoes: Add chopped onions and saute until golden brown. Add ginger-garlic paste and cook for a minute. Add chopped tomatoes and cook until they soften.
Add Spices: Add turmeric, red chili powder, coriander powder, and salt. Cook for a few minutes until the oil starts to separate from the masala.
Cook the Crab: Add the cleaned crab pieces to the pan. Mix well to coat the crab with the masala. Cover and cook for 10 minutes.
Add Coconut Paste and Coconut Milk: Add the coconut paste and cook for another 5 minutes. Finally, add the coconut milk and bring the curry to a boil. Simmer for a few minutes until the crab is fully cooked.
Finish: Sprinkle garam masala and mix well. Garnish with fresh curry leaves. Serve hot with steamed rice or appam.
