Marinate Soya and Paneer, soak soya chunks, drain, and marinate with paneer in yogurt and spices for 15-20 minutes.

Cook Rice, partially cook soaked basmati rice in salted water, then drain.

Saute veggies and marinated mix, saute onions, chilies, ginger-garlic paste, veggies, and marinated mixture in oil until veggies are tender.

Layer & Assemble, layer half of the rice over the veggie mix, top with fried onions, mint, coriander, and remaining rice. add saffron milk if desired.

Dum and serve, cover and cook on low for 15-20 minutes. gently mix and garnish before serving.
