Rinse and Cook Rice, rinse 1/2 cup of rice and cook it in 1 liter of full cream milk on low heat. Stir occasionally to avoid sticking.
Prepare Caramel, in a separate pan, melt 1/2 cup sugar over low heat until it turns golden brown to create caramel. Be cautious not to burn it.
Add Caramel to Rice, once the rice is cooked, add the caramel to the kheer. Stir well until the caramel is fully incorporated into the rice and milk mixture.
Sweeten Kheer, add the remaining 1/2 cup of sugar and mix. continue cooking on low heat until the kheer thickens to your desired consistency.
Add Flavors, stir in cardamom powder for aroma and flavor. Add 2 tablespoons of ghee to enhance richness.
Garnish and Serve, the caramel kheer with sliced almonds, pistachios, and a few saffron strands. serve warm or chilled.
