Here's how to make a fiber-rich mix of Vegetable Chaat at home.

Boil fiber-rich veggies like carrots, peas, sweet corn, and potatoes 1/2 cup each until just tender. drain and let them cool.
Chop Fresh Veggies, finely chop cucumber, tomato, onion, and capsicum 1/4 cup each, and add to the boiled veggies.
Add Protein Boost, mix in 1/2 cup boiled chickpeas or sprouts to increase fiber and protein content.
Spice it up, sprinkle chaat masala, roasted cumin powder, salt, and red chili powder. squeeze fresh lemon juice for tanginess.
Toss & Garnish, mix everything well. garnish with fresh coriander, pomegranate seeds, and a few crushed roasted peanuts or seeds. serve fresh.
