Here's how to make carbs and calcium rich Sabudana Upma at home.
Rinse & soak, wash 1 cup sabudana and soak in minimal water for 4-5 hours or until soft. drain excess water.
Prepare peanuts, roast ΒΌ cup peanuts, crush them coarsely, and set aside.
Heat oil, in a pan, heat 1 tbsp ghee or oil on medium flame.
Add spices, add cumin seeds, chopped green chilies, and grated ginger. saute for a few seconds.
Saute potatoes, add 1 small boiled or chopped potato and cook until slightly golden.
Mix sabudana, add the soaked sabudana and stir well to combine.
Season & cook, add rock salt, crushed peanuts, and cook for 4-5 minutes until sabudana turns translucent.
Finish with lemon & coriander, turn off the heat and add 1 tsp lemon juice & chopped coriander for extra flavor.
Serve hot, enjoy your delicious sabudana upma with curd or coconut chutney.
