Make the Filling, heat oil in a pan, add cumin seeds, chopped onions, and green chilies. saute, then add mashed corn, turmeric, garam masala, and salt. cook for 2-3 minutes, add coriander leaves, and let it cool.
Shape and Fill, divide the dough and filling into equal portions. roll a dough ball, add the corn filling, seal the edges, and flatten gently.
Cook the Paratha, roll the stuffed ball into a paratha. cook on a hot griddle, adding ghee or oil, until both sides are golden and crisp.
Serve, enjoy warm corn parathas with curd, pickle, or butter for a tasty meal.
