Prepare Dough, combine flour, salt, and ghee or oil until crumbly. add water gradually, knead to form a soft dough, cover, and rest for 20-30 minutes.

Make Filling, mix mashed potatoes with cumin, garam masala, red chili powder, turmeric, salt, coriander, and lemon juice until well combined.

Shape Kachoris, divide dough into small balls, flatten each, add filling in the center, and seal by shaping into smooth balls.

Roll, gently flatten each filled ball with your palms, then roll out to a 3-4 inch circle.

Fry, heat oil fry kachoris until golden and crispy, flipping occasionally for even cooking.

Serve, drain on paper towels and serve hot with mint or tamarind chutney.
