Prepare Ingredients, peel and dice 4 potatoes. chop 1 onion, 2 tomatoes, 2 green chilies, and coriander. gather cumin seeds, turmeric, red chili powder, garam masala, and salt.
Cook Potatoes, boil the potatoes until soft, drain, and set aside.
Saute Aromatics, heat 2 tablespoons of oil, add cumin seeds, and let them splutter. saute onions until golden, then add ginger-garlic paste and green chilies.
Add Spices and Tomatoes, mix in turmeric, chili powder, and salt. add tomatoes and cook until soft. add the boiled potatoes, mash slightly, and sprinkle garam masala.
Garnish and Serve, garnish with fresh coriander leaves. serve hot with parathas for a classic punjabi-style meal.
