Mix ingredients, in a bowl, combine grated pumpkin, flour, sugar, cinnamon, and salt to make a thick batter.
Heat oil, in a frying pan, heat oil over medium heat until hot.
Scoop batter, drop spoonfuls of batter into the hot oil, flattening slightly to form fritters.
Fry, cook each side for 2-3 minutes or until golden brown and crispy.
Drain and serve, remove fritters, drain excess oil on paper towels, and serve warm.
