Mix Ingredients, in a large bowl, combine rolled oats, peanut butter, honey, dried cranberries, chopped nuts, and cinnamon or nutmeg. add chocolate chips or coconut if desired.
Form the Dough, mix the ingredients well until the mixture forms a sticky, cohesive dough. if it's too dry, add a little more honey; if too wet, add a few more oats.
Shape into Balls, scoop out small portions of the mixture and roll them between your palms to form bite-sized balls.
Chill to Set, place the energy balls on a tray lined with parchment paper and refrigerate for 20-30 minutes to firm up.
