Make the slurry, mix cornstarch with water in a small bowl to form a smooth slurry without lumps.
Cook the mango mixture in a saucepan. combine the mango puree and sugar. heat gently on low flame until the sugar dissolves.
Add slurry, stir the cornstarch slurry to the mango mixture. keep stirring constantly to avoid lumps.
Thicken the curd, cook on low heat for 4–5 minutes, stirring, until the mixture thickens to a custard-like texture. turn off the heat.
Finish and cool, mix in lemon juice and butter for extra shine and flavor. let it cool, then refrigerate and enjoy.
