Prepare the Boondi Batter, in a mixing bowl, combine besan, baking soda, and enough water to form a smooth batter. the consistency should be similar to pancake batter.

Fry the Boondi, heat oil and pour the batter through a perforated ladle to create small round boondi. fry until golden, then drain on paper towels.

Make the Sugar Syrup, combine sugar and water. heat until the sugar dissolves completely, then add cardamom powder and saffron strands. boil the syrup until it reaches a one string consistency.

Mix Boondi with Sugar Syrup, add the fried boondi to the sugar syrup and mix well. allow the mixture to soak for about 30 minutes, so the boondi absorbs the syrup.

Grease Your Hands, with ghee to prevent sticking. take small portions of the boondi mixture and press it tightly to form laddoos. repeat until all the mixture is shaped into laddoos.

Garnish, roll the motichoor laddoos in chopped nuts for added texture and flavor. you can also place a piece of nut on top of each laddoo for decoration.

Let Them Set, allow the laddoos to set on a plate for a few hours before enjoying your homemade motichoor laddoos.
