Prepare Chicken, clean and pat dry the boneless chicken cubes. Place them in a bowl and marinate with salt, lemon juice, and ginger-garlic paste. set it aside for 15-20 minutes to absorb the flavors.
Make Creamy Marinade, in a separate bowl, mix hung curd, fresh cream, grated cheese, garam masala, white pepper powder, and cardamom powder. this will form a rich and smooth marination.
Marinate the Chicken, add the pre-marinated chicken cubes into the creamy marinade. mix well to coat all the pieces evenly. let the chicken marinate for at least 2-4 hours.
Preheat the Grill or Oven, preheat your oven or grill to 200°C (390°F) or prepare a hot charcoal grill. if using an oven, line the baking tray with foil and grease it lightly.
Thread the Chicken onto Skewers, take wooden or metal skewers and thread the marinated chicken cubes onto them, leaving some space between each piece to allow even cooking.
Cook the Chicken, place the skewers on the grill or in the preheated oven. cook for about 15-20 minutes, turning occasionally to ensure even grilling. baste the chicken with oil or butter halfway through cooking for added flavor and moisture.
Check for Doneness, the chicken should be tender, juicy, and lightly charred on the edges. once cooked, remove the skewers from the grill or oven.
Serve, garnish the malai chicken tikka with freshly chopped coriander and serve hot with mint chutney, lemon wedges, and naan or paratha.
