Prepare ingredients, chop the protein into bite-sized pieces, cube the potatoes, and slice the onion. set aside.
Fry the curry paste, heat oil in a pan, add the massaman curry paste, and stir-fry for 1-2 minutes until fragrant.
Add coconut milk, gradually pour in half the coconut milk, stirring constantly, until the oil separates from the curry paste.
Cook the protein, add the protein pieces and coat them well in the curry mixture. let them cook for 5 minutes.
Add potatoes and onions, pour in the remaining coconut milk, add potatoes, onions, cinnamon stick, and cardamom pods. simmer for 20 minutes.
Season the curry, stir in tamarind paste, fish sauce, and palm sugar. adjust seasoning to balance sweet, salty, and tangy flavors.
Garnish and serve, add peanuts and simmer for 5 more minutes. serve hot with steamed jasmine rice.
