In a large skillet or saucepan, heat the vegetable oil over medium heat.
Sauté diced onion until softened, then add minced garlic and ginger and cook for 1-2 more minutes.
Add the Thai curry paste to the pan and cook for another 1-2 minutes, stirring frequently until fragrant.
Pour in the coconut milk and chicken or vegetable broth, stirring to combine.
Stir in fish sauce or soy sauce and brown sugar, and mix well.
Add protein and vegetables, then bring to a simmer.
Cook for 10-15 minutes, or until the protein is cooked through and the vegetables are tender.
Taste and adjust seasoning with more fish sauce, sugar, or lime juice if needed.
Serve the curry over cooked rice and garnish with fresh basil or cilantro.cilantro.
